{"id":5730,"date":"2018-01-20T17:33:36","date_gmt":"2018-01-20T16:33:36","guid":{"rendered":"https:\/\/www.technoacque.com\/?p=5730"},"modified":"2023-08-04T17:26:13","modified_gmt":"2023-08-04T15:26:13","slug":"water-the-secret-for-an-excellent-beer","status":"publish","type":"post","link":"https:\/\/www.technoacque.com\/en\/blog\/water-the-secret-for-an-excellent-beer\/","title":{"rendered":"Water, the secret for an excellent beer"},"content":{"rendered":"<p><strong>It is assumed that every industry knows the characteristics that the treated water must have according to its uses, and they can be very different even in apparently equal fields.<br \/>\nA typical case is industrial production of beer: the differences in the composition of the water used in the process largely determine the character of beer.<\/strong><\/p>\n<p>By using a very light water with about 25 ppm of bicarbonates and about 30 ppm of total hardness, a Pils-type beer can be obtained, while by using mineral water with about 300 ppm of bicarbonate and 700 ppm of total hardness (all expressed in ppm CaCo3 ), you get a Dortmund-type beer.<br \/>\nMany brewers accept the available water and produce only beers that work with it.<\/p>\n<p>With the growth of experience, knowledge and contact with other brewers, emerges the desire to improve their beer: the right attention is paid to water, as an instrument and not just a vehicle for the flavours that come from all the other ingredients of the beer.<br \/>\nA brewer who wants to improve his beer has essentially two options in the approach to <strong>water for brewing<\/strong>: to change source or to change the characteristics of the available water.<br \/>\nSince water cannot be easily obtained from a different source, it is possible to intervene on the available one: if an ion is present in an excessive amount, then it must be removed or if some ions are deficient, they must be added.<br \/>\nTo obtain the best flavour profile, it is necessary above all to find the appropriate <strong>pH<\/strong> for the mashing and to know the relationship between flavours and the minerals in the water (e.g. the sweetness imparted by the chloride ion and the synergism of the sulphate ion with the bitterness of the hops.<br \/>\nThe balance between bicarbonate and phosphate ions depends on the pH and each of the numerous and complicated chemical reactions that occur during malting, mashing and fermentation are mediated by the biochemical catalysis of the enzymes. The behaviour of the enzymes depends on the temperature, as many brewers will know, but also on the pH: above or below the ideal values, ??the enzymes can slow down or stop their activity, preventing proteolysis or saccharification.<br \/>\nAn alternative to the characterization of water through the addition or removal of ions  is the reverse osmosis desalination (RO) which, like a blank page, allows the brewing liquid to be constructed starting from zero,  in order to obtain the desired ion concentrations.<\/p>\n<p><strong>It is necessary to specify that the water quality requirements in the brewery may vary according to the role assumed within the process.<\/strong><\/p>\n<p>The <strong>best water for brewing<\/strong> may not always be the best water for other purposes in the brewery. The water used for cleaning, steam generation, cooling or dilution may require parameters that are clearly different from that of the mash or sparging (washing of the grains).<br \/>\nThe production of beer consumes a lot of water, in fact for 1 litre of beer it takes from 6 to 20 litres of water. It is necessary to be able to treat the water minimally for every task it has to perform.<br \/>\nThe cleaning water should have a low calcium and magnesium hardness to make the use of detergent and caustic substances as efficient as possible.<\/p>\n<p><strong>Water treatment for boilers<\/strong>, in the form of steam and feed water, is essential for maintaining energy efficiency and the integrity of steam generation systems. Poor equipment management and misuse of water can have important effects on system performance, energy costs, water and gas emissions, as well as equipment life.<br \/>\nThe <strong>treatment and disposal of wastewater<\/strong> is then the main issue with many growing breweries. With the increase in beer production, the waste water is subjected to increasingly meticulous examinations.
